Hey A Mind Full Mom readers! It’s Michelle from Giraffes Can Bake here. Kristen was kind enough to let me drop by and share some of my favourite Chocolate recipes I’ve created with y’all! I hope you like them as much as I do!
Chocolate is a really wonderful thing! Not only is it delicious, it’s also really good for your mind and body – yep, that’s right! Eating chocolate releases endorphins in your brain, giving you feelings of pleasure and well being, similar to the feeling of falling in love – this is why many people turn to chocolate in times of emotional distress, it makes us feel better, and it’s not just because it’s yummy! And chocolate doesn’t just make us happy, it’s good for our body too! This isn’t a new discovery, the Aztecs harnessed the goodness of chocolate and celebrated the nourishment it can provide (they even used cocoa beans as currency, that’s how much they valued it). Dark chocolate is full of antioxidants that protect your heart – it can reduce the risk of heart disease, blood clots and hypertension! It’s also full of essential vitamins and mineral that keep our body going, such as magnesium.
Now, I’m not saying eating chocolate all is the way to healthy diet, you shouldn’t be replacing your fruits and veggies with chocolate of course! All the sugar and milks we tend to add to chocolate can make it pretty bad for us, and all of the recipes I’m sharing with you today are all about the yum factor, they’re not health foods! But, with that said, indulging in a little dark chocolate once a day can do your mind and body good – so don’t be afraid to treat yourself! And all of the chocolatey recipes I’m sharing with you today contain at least some cocoa or dark chocolate, so at least you can rest assured you’re getting a little goodness for your mind along with the deliciousness! Everything in moderation, right?
Now, on to those yummy recipes!
- We all know that chocolate is delicious by itself, but add orange into the mix and it’s truly divine! Chocolate Orange is one of my all time favourite flavour combinations – the creamy chocolate with zesty orange is just so yummy. Here in the UK we have Terry’s Chocolate Oranges all year round, but they still stir up memories of Christmas for me and I think that’s part of the reason I enjoy them so much.These brownies are to die for, they’re so good! They combine three of my favourite treats – chocolate oranges, brownies and cheesecake – what’s not to love? The brownies are gooey and fudgy, just like a proper brownie should be, and the cheesecake layer melts right into it giving you that tangy, cheesecake goodness throughout. And, possibly the best part, these brownies are so easy to make! All you need is some mixing bowls, a wooden spoon and a brownie pan – any rectangular baking dish will do. This recipe calls for a 9″x13″ pan but it’s pretty flexible, if you use a smaller pan you’ll just have thicker, gooier brownies (you’ll just need to bake them a little longer).Grab the recipe here
No Bake Strawberry and Chocolate TartWe all need a good no bake dessert in our lives – they’re easy to put together and perfect for the summer when it’s just too hot to turn on the oven too often! The No Bake Strawberry and Chocolate Tart ticks all the boxes when it comes to a delicious and indulgent dessert, it makes the perfect dish to take a long to a dinner party, family gathering or pot luck! This tart is so rich and indulgent, you’ll only need a small slice – but don’t be surprised when guests are asking for more! The fresh strawberries add a wonderful burst of flavour, intensified by a layer of strawberry preserves in the base. Vodka is mixed with the preserves for a more naughty treat for adult, however the vodka is easily omitted without taking away from the yumminess for a more family friendly dessert!Grab the full recipe here
Chocolate Coconut Cupcakes Bounty bars (known as Mounds in the U.S) are one of my absolute favourite chocolate bars – the chocolate covered coconut is just divine (you can find my recipe for homemade bounty chocolates here). So putting those delicious flavours into a cupcake just seemed like the right thing to do! The cupcake itself is dark, moist chocolate cake with so much chocolatey goodness, it’s then filled with a sweet and gooey coconut filling and topped with a fluffy coconut buttercream. These cupcakes are simple to make and your whole family will love them – I mean, who doesn’t love a good cupcake?Grab the full recipe here
Chocolate Butterscotch Cheesecake Now this is one truly indulgent dessert, one that your family and friends are going to be begging you bring to every gathering! It’s a creamy, baked cheesecake with real chocolate melted right into the batter and swirled with tons and tons of delicious Brown Butter Chocolate Butterscotch Sauce, which is insanely good, and then slathered with even more of it after it’s baked! Baked cheesecake is my all time favourite dessert, and this cheesecake is my all time favourite cheesecake – you’ve honestly got to try it to believe how good it is. Chocolate & Peanut Butter Banana BreadAs you may have gathered from the recipes in this mini round up, I love to combine chocolate with amazing, complimentary flavours. And is there any better combo than Chocolate and Peanut Butter? They go together like rama lama lama ka dinga da dinga dong, whatever that even means (I hope you’re all Grease fans and don’t just think I lost my mind!). Who doesn’t love banana bread, right? It’s moist, delicious and the perfect sweet breakfast treat – it’s a great and easy way to use up those overripe bananas too (seriously, never ever throw away brown bananas, you’re throwing away delicious banana bread potential!). This Chocolate and Peanut Butter Banana Bread really does take the breakfast treat to a whole new level, who doesn’t love an excuse to eat chocolate for breakfast?! And, okay, it’s not the healthiest breakfast but it will start your day off just right (remember those endorphins!) and it’s great as an occasional treat – it’s so easy to bring together too that you can whip it up at a moment’s notice!
