I adore smoothies.
I love to get a dose of fruit in myself and my children with a delicious creamy drink. And this is a sure fire bet to get my husband to “eat” his fruit. My family has decided that I make smoothies better than any smoothie shop or anyone they know.
My secret–I keep it real!!! I let the fruit and a few other key ingredients shine through.
There are are so many versions of smoothies out there. This is our go to smoothie in our house right now. The tropical flavors are amazing and it compliments Mexican Cuisine so much–so we include this Pina Colada Smoothie at least weekly in our meal plan.
This smoothie is adored by everyone I make it for, even people who are not typically a fan of Pina Coladas, and it could not be easier–loving it already, right?!
So the star players are 100% pineapple juice, 100% orange juice, canned coconut milk, and bananas.
I always keep orange juice and pineapple juice concentrate and bananas in my freezer and canned lite coconut milk in my pantry, so this is a quick go to at all times.
Here is my winning combination for 4 drinks:
- 2 cups pineapple juice
- 2 cups orange juice
- 1 cup coconut milk (canned and I use Trader Joe’s light)
- 2-3 frozen bananas (broken into chunks for easier blending)
Put everything into a blender and blend away until smooth! Enjoy… the straw is optional 🙂
