This is one you do not want to miss. It is a sweet and spicy combination of chicken, salsa, hot sauce, beans, and pineapple. And let me tell you–it creates one bite of savory POW for your mouth.
This dish is completely versatile and can be served over rice, quinoa, on top of sweet potatoes, or rolled into a tortilla. However, I decided to serve it tucked into lettuce wraps and topped with Greek yogurt, feta cheese, cilantro and a squeeze of lime. OH MY WORD!!
