I don’t get caught up into too many foods being superfoods. Back in the day it was all Popeye and spinach and now we hear about kale, cauliflower, gogi berries, and chia seed. The bottom line in my book is that if you are eating a varied diet of natural, God-made foods, you will get what your body needs.
But let’s talk about chia seeds for a moment. Anything that can give me a boost of Omega Acids without having a tail is a winner in my book for sure. Try as I may, fish and my taste buds are not friends. So, I have to get my omega acids from other sources. And chia seeds happen to be the richest plant-based source of Omega 3s AND are an excellent source of dietary fiber and complete protein. Call them a superfood, call them healthy, call them what you may–regardless, chia seeds should be a part of your diet!
While there are SO many ways to incorporate chia seeds into your diet, Mamma Chia has an upper hand on creating tasty ways to use the seed. And I have taken two of their products to create a tasty little treat–one my kids and I love to snack on in the afternoon–Strawberry Chia Yogurt Parfait.
High protein, calcium-rich Greek yogurt has been layered with a strawberry banana chia fruit and veggie puree and a perfectly sweetened vanilla granola. This powerhouse snack has hints of honey, rich molasses, and sweet fruit all enveloped in a creamy yogurt that is finished off with a sweet crunch of granola. It is a delicious way to satisfy your sweet tooth, get your post-workout boost, or just to get in a hefty dose of omega 3s. I think you will agree, after just one bite!
- 2 cups plain Greek yogurt
- 1 Strawberry Banana Oraganic Chia Squeeze
- ½ cup Vanilla Almond Oraganic Chia Granola Clusters
- 4 fresh strawberries for serving
- In 4 small serving dishes, layer ¼ cup yogurt followed by 1 tablespoon chia squeeze, and 1 tablespoon granola clusters. Repeat layers. Serve with a fresh strawberry on top if desired.
