A light and refreshing combination of watermelon, lime and sparkling water. This beverage is the ultimate way to cool down on a hot summer day. Summer has officially started which means I like to be sitting poolside with a refreshing beverage. This of course is NOT how I spend my entire summer, but a girl can dream, right?!
In the hot, humid months in the south, I need to work extra hard at keeping myself hydrated. Which means lots of water–water by the gallons. But I get bored of water quickly. I want to change it up while still being conscious to keep calories and sugars in check.
My favorite way to add a little creativity to my choice of beverages, is to have an Aqua Fresca.
An aqua fresca, is a non-alcoholic Mexican drink that is simply fruit, water, and sometimes simple syrup blended together. And there are LIMITLESS combinations of flavors that make some killer aqua frescas. It literally means cool waters in Spanish. And I can promise you this water will cool you down.
We munch on watermelon weekly at my house when it is ripe. It is a great fruit that helps keeps us hydrated and is so sweet it aids in satisfying our sweet tooths. However, watermelons are often HUGE, and as much as we love watermelon, it can be tough for us to eat the whole thing before it goes bad.
One of the best ways to use it up, is to puree some of the fruit with fresh lime juice and then top it off with seltzer water. It is a fresh sip of summer!!
This “recipe” is quite simple. I blend up some watermelon with some of the juices that have inevitably collected in the bottom of the bowl of my diced watermelon with some fresh lime juice. Because the watermelon we have been getting lately is incredibly sweet, we have not needed to add sugar. Sometimes, I will add 1-2 tablespoons of honey to the watermelon if it was more on the sour side. And then I top it off with seltzer water. Most aqua frescas are made with just water. I think the seltzer water makes the drink more fancy, and well, I like to pretend I am fancy.
- 2 cups diced watermelon
- ¼ cup watermelon juice
- ½ cup fresh lime juice (2 large limes)
- 3 cups plain seltzer water
- Blend together the watermelon and juices from the lime and watermelon until smooth. Pour ½ cup into each glass and top with ½ cup fresh seltzer water. Serve with a lime wedge.
