Two “clean” ingredients come together to create an ice cream sandwich that is irresistible. Perfect for busy days!
To say my life has been busy would be an understatement. We are moving out of state and “homeless” for 6 weeks because our current home sold in days and our new home is still under construction. Did I mention I am also in the process of fighting off a nasty lung infection as well? Yep, it is crazy around here.
And guess what, my family still needs to eat! The nerve 🙂
But truth be told, I like to eat as well. And if I am being COMPLETELY honest with you, I typically crave junk when under stress.
When I am under stress, I usually want to get in the kitchen and let myself go with creating, cooking, and baking. Right now, that is NOT happening. Why, you ask? Because I am in moving disarray! So in order to cave into my intense cravings, I have a few choices.
- Grab a bag of something processed from the store and feel horrible the next day and add more stress to my life.
- Ignore the craving and become a nasty, nasty person–TRUTH
- Pick up a few “cleaner” ingredients and make a small, portion controlled treat.
Clearly, I try to pick choice #3. For my last craving, I searched my dismal pantry and found some whole grain organic graham crackers and simple ice cream. By “simple” ice cream I mean one that has 5 or less ingredients–milk, cream, sugar, vanilla. No carraggean or artificial ingredients. Thankfully, there are some out there. Breyer’s has an all natural vanilla bean and chocolate that I can find just about any where I go or there are several organic store brands that work as well. For graham crackers, I look for one made with whole grains, honey, and no preservatives or corn syrup.
And what happens when you put the 2 ingredients together? MAGIC!! I am serious, it is magic. I could eat these little ice cream sandwiches immediately, but if I can be patient and wait a few hours, the crackers soak up some of the ice cream and become softer, like traditional ice cream sandwiches (that are WAY over-processed and over-priced!!)
Seriously, this could not be easier or tastier!
I take my ice cream out of the container and slice into squares that fit onto a half of a graham cracker sheet and cover with remaining half. And done.
There is no recipe here. It is just graham crackers and ice cream. The options are ENDLESS. Try strawberry ice cream, dairy free ice cream, or use gluten-free graham crackers! What about chocolate graham crackers spread with peanut butter ice cream? And on that note, I am off–must make those ASAP!!!
Relieve some stress with NO effort and please your family and yourself. Trust me these are good!
