I consume sweet potatoes for breakfast in some form at least weekly. Whether in oatmeal, pancakes, or a hash, sweet potatoes lend a perfect sweetness to pancakes and waffles and a perfect savory bite to quiche or hash.
Sweet potatoes are incredible with Mexican recipes. They meld perfectly with homemade taco seasoning and make a great quick lunch.
Hidden Veggie Quesadillas
Oh that sweet potato casserole, it is hands down one of mine and my kids most favorite things to eat EVER! While I tend to only make it for holidays, I do love sweet potato side dish with just about any meal.
Sweet potatoes should not be just reserved to side dishes when they can stand alone in chilis and as a base of a delicious veggie burger.
