Pro Tips for the BEST Pancakes
- Measure the flour correctly. I suggest using a spoon to scoop flour directly into the measuring cup. If you try to use the measuring cup to scoop flour you will typically end up with up to ¼ cup more flour. And that translates into dense pancakes.
- Whisk the dry ingredients well before adding wet ingredients. In fact, I strongly recommend sifting the flour with the baking powder, baking soda, and salt. There is nothing is worse than biting into a lump of baking powder.
- Be sure your baking powder is fresh.
- Use acid, like buttermilk, lemon juice or apple cider vinegar, to add flavor and keep pancakes light and fluffy.
- Do NOT over mix batter—a few lumps are fine!
- Consistency! Use ¼ cup measuring cup to scoop out batter evenly onto griddle.
- Cook over medium heat. Higher heat will cause your pancakes to brown too much and low heat will not allow your pancakes to develop any color.
- DO NOT push down on pancakes after flipping. This will cause the bubbles to pop and the pancakes to become flat and dense.
Tips for Serving Pancakes
- Remove pancakes from griddle and place on oven safe cooling rack on baking sheet. Simply stacking pancakes on a plate after cooking will cause trap the heat in between the pancakes and make them soggy.
- If you are making a large batch of pancakes, keep the baking sheet in an oven set to 200 degrees. As you remove pancakes from the pan, add them to the baking sheet in the oven. This temperature will keep the pancakes warm, but not dry them out.
- Warm maple syrup by placing in heat safe measuring cup and microwaving for 30 seconds to 1 minute. You can also add cinnamon or vanilla to the maple syrup for an infused syrup.
- Use a medicine dropper filled with pure maple syrup to let kids “pour” their own maple syrup onto their pancakes. This limits the amount of syrup they use on their pancakes, but yet they love the control they have to squirt the syrup out themselves.
How to Store Pancakes
If you happen to have leftover pancakes, you can either store in the refrigerator for 4-5 days or in the freezer for 3-4 months.
To Store Pancakes in the Refrigerator
- Cool pancakes to room temperature.
- Place pancakes in layers between wax paper and place in air tight container or bag.
To Freeze Pancakes
- Place pancakes in a single layer on a cookie sheet lined with parchment or wax paper.
- Freeze for 30 minutes.
- Remove pancakes off the cookies sheet and place in freezer safe bag or container.
How to Reheat Pancakes
- Place 1-3 pancakes on heat safe plate an microwave for 30 seconds, flip pancakes over and microwave for additional 30 seconds.
- Or wrap pancakes in foil and place into 350 degree oven for 10 minutes. This is the PREFERRED method for reheating pancakes, as the pancakes will warm evenly, not get soggy, and not dry out using this method.
- Place pancakes in toaster to warm through. The pancakes may get a bit crispy, but very minimally.
- Microwave 1-3 pancakes at at time for 1 minute, flip pancakes, and microwave for additional 30-60 seconds, depending on microwave strength.
- Wrap pancakes in foil and place 350 degree oven for 20 minutes.
