I never intended for this to be a recipe I shared with you. Hence the less than stellar picture.
I was at home deep in house work, when my stomach began to summon me. I knew it was time to take a break to feed the beast that was calling my name.
I took a quick look around my kitchen and saw I had 2 pieces of Italian-seeded bread, a peach, some cheese, and after digging through my meat drawer, I found the golden nugget-prosciutto.
How that prosciutto had not been used, is beyond me. I must have hidden it so well after a trip to the store that even I had forgotten about one of my favorite ingredients.
I thought what the heck? Peach and prosciutto–perfect sweet and salty match. Why not throw some sharp cheddar cheese, whole grain mustard on some bread and toast the sucker up?
I was hungry!! I could not just eat peach and prosciutto slices on a day that I had been knee-deep in laundry and finger smudges.
Biting into the crispy, lightly buttered bread, and sinking my teeth into the sweet bite of a Georgia-grown peach, paired with the saltiness from the prosciutto, the tang of the mustard, and the creaminess and sharpness from the cheese.
Oh my word! Heaven!
So butter up any bread you have, lather on the mustard, and top with sliced ripe peaches. Add a slice of prosciutto and toast this baby up on a panini press or in a pan.
And you can thank me that my inner beast (aka my stomach) forced me to invent this creation!
