Lay sliced eggplant on a rack over a baking sheet and salt both sides of the eggplant. Let the eggplant sit for 30 minutes. Then rinse away the salt and pat dry.
Prepare the breading station by mixing the flour with garlic & salt. In a second dish, whisk an egg with water. In the final dish, combine panko, Parmesan, & seasonings.
Dredge the eggplant in the flour, then into the egg mixture, then finally, coat the eggplant slices in the breadcrumb mixture. Spray the eggplant with cooking spray and place it in the air fryer.
Air fry at 370 degrees F for 6 minutes. Flip the eggplant, spray again with cooking spray and cook for an additional 6 minutes at 370 degrees F.
Remove the basket, spread tomato sauce on top of the eggplant, and top with sliced mozzarella cheese, and air fry for 3-4 minutes at 370 degrees F.
