Zucchini Fries

Air Fryer

*Zucchini *Flour *Kosher salt *Egg *Water


*Panko bread crumbs *Parmesan cheese  *Garlic powder *Red pepper flakes 

Cut the zucchini in half lengthwise. Cut each half into fourths length-wise. Finally cut each stick in half widthwise, for a total of 16 sticks.


Prepare the breading station by mixing the flour with the salt. In a second dish, whisk an egg with water. In the final dish, combine panko, Parmesan, garlic powder, and red pepper flakes.


Dredge the zucchini sticks in the four, then dip them into the egg mixture. Finally coat the sticks in the breadcrumb mixture. Place into air fryer and spray with cooking spray.


Cook for 7 minutes at 400 degrees  F. 


Flip the zucchini then spray again with cooking spray and return to the air fryer. Air fry for an additional 6-7 minutes or until the breading is golden.


To serve, dollop the tomato mixture over the toasted bread, and if desired, drizzle with more  olive oil
