What is a Mini Breakfast Tart?
Puff pastry is filled with tender potatoes, bacon, sauteed spinach, roasted peppers, eggs, and cheese for a savory, buttery, irresitible breakfast tart.
Cut one sheet puff pastry into 6 equal rectangles and place a slice into a lightly greased muffin tin.
Saute bacon until brown and crispy, and remove bacon from the pan. Saute potatoes, peppers, onions, and spinach, in bacon grease until potatoes are fork-tender. Divide mixture between the cups.
Whisk together eggs with milk, salt and pepper and pour over egg cups. Sprinkle with cheese.
Fold over tops of puff pastry to seal the egg mixture. Brush with an egg wash.
Bake until golden.
Serve with a side of fresh fruit and enjoy!
