RICE CASSEROLE

broccoli cheese

Melt butter in a large stock pan. Add in flour to form a roux, then whisk in stock, milk and seasonings. Simmer until thickened.

Stir in cooked broccoli, cooked rice, and cheese tossing to coat.

Transfer the mixture to a buttered dish and top with additional cheese.

Bake until warm and the cheese has melted.

My husband, who doesn't usually care for "casseroles" or broccoli, gave unsolicited and highly positive commentary on this dish. It's definitely a 'make-again' recipe at my house!
