Lower in fat thanks to using applesauce in place of part of the oil.
Pour the milk over the oats and let sit for 5-10 minutes to allow the oats to soften.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and chocolate chips.
Mix the egg, maple syrup, applesauce, oil, and vanilla together. Add to flour mixture along with the soaked oats, and fold the batter together until combined.
Fill each muffin cup 2/3rds of the way full with the muffin batter. Sprinkle with additional oats and chocolate chips if desired.
Baked until the muffins are set. Cool for 10 minutes in muffin tin before transferring the muffins to a cooling rack.
