ZUCCHINI MUFFINS

Chocolate

Instead of being loaded with refined flour and sugars, my recipe for Zucchini Muffins is made with whole grains, naturally sweetened with honey, and lower in fat thanks to using applesauce in place of part of the oil. And of course chocolate for good measure!

WHOLESOME SWAPS

Place the shredded zucchini into a piece of cheesecloth or a clean kitchen towel and give a firm squeeze over a sink or bowl.

In a mixing bowl, mix together the flour, cocoa powder, salt, baking soda and baking powder.

In a seperate mixing bowl, mix together the eggs, milk, vanilla extract, and applesauce.

Combine the wet ingredients with the dry ingredients and gently fold in the zucchini and chocolate chips into the batter.

Portion the batter out into 12 greased or lined muffins cups. Sprinkle the top of each muffin with mini chocolate chips if desired.  Bake at 350 degrees until set.

I’ve made these muffins with WWF, applesauce, coconut oil and unsweetened vanilla almond milk, and love them!! Healthy snack.
