GREEN BEANS CASSEROLE

Blanch fresh green beans in boiling salted water for 3 minutes. Remove the green beans and place into an ice bath.

Prepare the mushroom sauce by sauteeing mushrooms in butter. Add flour to form a roux then slowly whisk in sherry, stock, and milk. Simmer to thicken.

TToss thinly sliced onions with a seasoned breadcrumb mixture.

Drain the green beans well then toss with the mushroom sauce. Layer the beans in a casserole dish and top with the onions.

Bake until bubbly and golden.
