Prepare zucchini by grating the zucchini and then place in clean kitchen towel. Wring out any exess moisture.
In a large mixing bowl, whisk together the flour with the baking powder, baking soda, salt, and cinnamon.
In a separate mixing bowl whisk together the oil, eggs, applesauce, vanilla, and honey.
Add the wet ingredients into the dry ingreidents and fold together until just combined. Gently fold in the prepared zucchini and crushed pineapple.
Pour the batter into a greased 9x5 loaf pan and bake at 350 degrees F for 55-60 minutes or until set.
