Your papa got this recipe to perfection!  It was so hearty and delicious! Not too sweet, with a lovely little tang. Your papa's recipe is now saved into our family's recipe box. Thank you so much!

Soak dried navy beans overnight, drain, and then simmer on the stove with fresh water for 1 hour or until tender. Alternatively, prepare the beans in the Instant Pot or USE CANNED NAVY BEANS!

In a nonstick skillet, saute bacon  and onions together over medium heat until the onions are softened and the bacon just begins to crisp up.

Mix together tomato sauce, brown sugar, molasses, maple syrup, salt, dried mustard, apple juice, water, and the bacon and onion mixture together. Add the beans and stir gently.

Pour the beans into a 2 quart casserole dish. Cover and bake for 2 hours. Uncover, stir the beans and cook for an additional 30 to 60 minutes, until the sauce is bubbly and thickened up.

Serve as a side dish, or how my Papa taught me to eat baked beans--scoop them up with potato chips. So good!
