In a large mixing bowl, combine salt, pepper, crushed red pepper flakes, onion powder, sage, and cloves together. Add the ground pork and maple syrup and mix until everything is just combined.

Cover the sausage mixture with plastic wrap and refrigerate for 12 to 24 hours to allow the flavors to really develop and the meat to cure.

Shape the sausage mixture into patties. Heat 1 teaspoon of oil in a large nonstick skillet over medium-high heat and cook the patties for 4-5 minutes per side.

Alternatively, brown the sausage mixture in a large nonstick skillet over medium-high heat, breaking it up into small pieces as it browns.

Serve the sausage patties or cooked ground sausage as desired.

I love that I can make delicious sausage without all the added 'ingredients'. It's a bonus that this is easy too - perfect breakfast dish!
