Pumpkin Puree

this simple recipe yields smooth, earthy pumpkin puree with the most concentrated flavor. 

what you need:

Use pie Pumpkins, not jack-o-lantern Pumpkins or carving pumpkins

Slice off the top of the pumpkin, removing the stem. Cut the pumpkin in half. Scrape the seeds and pulp.

step 1

Lay each half of the pumpkin face-down on a prepared baking sheet. Bake and let cool.

step 2

Scoop the flesh of the pumpkin into a food processor. Process until smooth and creamy.

step 3

Store the cooled pumpkin puree.
