Chicken Fajitas

Honey Lime 


*Chicken: Either chicken breasts or chicken thighs can be used. *Honey Lime Marinade: Made with fresh lime juice, lime zest, and balanced with garlic and spices.  *Corn Salsa: Freshly grilled corn is tossed with honey and hot sauce for a cruncy topping that is just perfect. 

Mix together honey, lime juice, lime zest, and salt until well combined. Add the chicken and toss to coat. Marinate the chicken for 30 minutes to 2 hours. 


Remove the chicken from the marinade and place onto a grill or grill pan preheated to medium-high. Add the husked corn and grill for 5 minutes per side. 


Remove the chicken and corn from grill. Allow the chicken to rest for 5 minutes and then slice the chicken into strips to use for the fajitas. 


Slice the corn kernels off the cob and then mix the kernels with honey, hot sauce, and a pinch of salt. 


Assemble fajitas by topping a tortilla with the sliced chicken, a scoop of corn, salsa verde and queso fresco.


The flavor and textures of these honey lime chicken fajitas are out-of-this-world! I loved each and every bite!
