Baked Beans

Place dried, rinsed navy beans in the inner pot of the Instant Pot and cover with cold water and cook on high for 20 minutes with natural release. Strain off cooked beans.


Heat the Instant Pot to saute and add in chopped bacon. Once the bacon has rendered some grease, add in the onion and saute unti the onion is softened. Turn the IP off. 


Add in the apple juice and scrape up any browned bits. Add in the beans, seasonings, maple syrup, molasses, vinegar, and tomato sauce. 


Cook on high pressure for 20 minutes with a natural pressure release. 


Serve as a side dish, or my favorite way--scooped up with potato chips. So good!


I made these today and they were awesome! I didn't have any bacon so I left it out, but even without it, the flavor is delicious! I'll be making these again. Thanks for a terrific recipe!
