For the meatloaf, mix together beef broth, egg, ketchup, bread crumbs, and dried seasonings together in a mixing bowl.
Add the meat to the mixing bowl and use your hands to incorporate the ingredients together. Add the mixture to a foil boat and use your hands to shape into a round loaf.
Place chopped potatoes in the bottom of the inner pot and add the broth, and season with salt. Then place your rack on top.
Place the meatloaf on top of the rack. Seal the pressure cooker and cook on high pressure for 20 minutes. While the meatloaf is pressure cooking, mix together the glaze for the meatloaf and set aside.
Let pressure release and then open up the inner pot. The meatloaf may not be pretty, but it is tasty. Remove the meatloaf and glaze. Broil for 3-5 minutes.
Use a potato masher to mash the potatoes until they reach a desired consistency. Add in butter and sour cream and stir to incorporate.
Slice the meatloaf and serve with the mashed potatoes.
