Instant Pot  Pork Tenderloin

INGREDIENTS

*pork tenderloin *sweet potatoes *apples  onions and garlic *apple juice or cider *salt and pepper

Turn the instant pot to saute and add in a bit of oil to heat. Once heated, add a seasoned pork tenderloin to the pot and brown on each side.

Remove the tenderloin from the inner pot and turn the Instant Pot off. Add in the cider and scrape up the browned bits on the bottom of the pot.

Add the sweet potatoes, apples, onions, and garlic to the inner pot. Nestle the pork tenderloin on top of the potato mixture.

Pressure cook for 3 minutes on high pressure with a 10 minute natural pressure release.

Remove the tenderloin and let rest for 5-10 minutes before slicing. Strain off the potato mixture, reserving the liquid, and mash to desired consitency, adding cooking liquid as needed.

Delicious! I made two tenderloins (about 2.5 lbs.), but didn't increase the vegetables...The flavor was wonderful. I'll definitely make it again.
