SWEET POTATO CHILI
Turn Instant Pot to saute, add oil, and let heat. Saute onions until just softened and then add in the garlic saute for just a minute longer. Turn IP off.
Add in a bit of broth and scrape up any browned bits on the bottom of the inner pot.
Add in seasonings, remaining broth, sweet potatoes, beans, and and then top with tomatoes.
Cook on high pressure for 10 minutes with a natural pressure release.
Serve the chili with diced avocado, lime juice, and cheese if desired.
