Instant Pot Turkey  Breast

Herb Butter

1.

Mix together softened butter with fresh herbs and salt and peppe then gently loosen the skin of the turkey breast and rub  the butter under the skin of the turkey.

Prepare Turkey

Plour stock into the inner pot of the instant pot and place in metal rack. Place seasoned turkey on rack and place an onion and celery stalks in cavity if desired.

Pressure Cook

Pressure Cook on High Pressure for 6 mintues per pound with a natural pressure release.

Broil

Place turkey breast on sheet pan and drizzle with oil and broil until golden.

Strain Liquid

Strain the cooking liquid over a fine mesh strainer. 

Make Roux

Turn insant pot to saute. Add in butter and whisk in flour to form a roux.  

Prepare Gravy

7.

Slowly whisk in reserved liquid  and allow to thicken. Season before serving. 

Serve

8.

Slice up the turkey and serve with gravy.
