Italian Wedding Soup

INGREDIENTS

This soup is made with perfectly seasoned homemade meatballs, tender pasta, and a rich broth.

For the meatballs, mix together the seasonings and then add in the meat and gently combine.

Shape the meatballs into  1-inch sized balls and bake until golden.

Heat oil in a large stock pan and saute the carrots, onions, and celery until the onion is softened. Add garlic and saute for just 30 seconds.

Deglaze the pan with white wine and then slowly add in chicken stock and seasonings and bring to a boil. Reduce the heat and simmer.

After simmering for 20 minutes, add in the meatballs and pasta and simmer until the pasta is tender. Stir in the spinach.

Whisk together the eggs & parmesan. Stir the soup in a circular motionn, gradually drizzling the egg mixture into the moving broth. Cook for 1 minute, stirring constantly.
