For this recipe, you can use baby carrots, garden carrots, or a bag of bulk carrots from your grocery store. 

Wash and peel carrots and trim off the green leafy tops if needed. If your carrots are on the larger side, cut them into 2-inch sections lengthwise.

Place the carrots onto a sheet pan and drizzle with oil and season with salt and pepper. Spread carrots out evenly.

Roast carrots until tender and a bit golden, flipping halfway through bake time.
