STRAWBERRY BARS

fresh

To make the crust and crumble, combine flour, sugar, and a dash of salt in a food processor fitted with a pastry blade. Add in cold, cubed butter and pulse together until pastry dough is crumbly and butter is evenly distributed.

1

Remove ½ cup of the mixture and reserve to use as the streusel topping. Press the remaining mixture evenly into the a 8x8 baking dish lined with parchment paper.  Bake at 350 F for 15 minutes.

2

Mix together yogurt, sugar, vanilla, egg, lemon juice and lemon zest together. Gently fold in the strawberries. Spread over baked crust and top with streusel. Return to oven for 45-50 minutes.

3

Once the steusel is golden, remove from the oven and cool for 1 hour. For best results refrigerate overnight and then slice into 12 bars and enjoy.

These bars were just the Spring treat I was looking for to use up some strawberries before they went bad. SO delicious an I can't wait to make them again!
