ACORN SQUASH

This recipe is made with acorn squash that is stuffed with rice that has been cooked with crumbled sausage, onions, celery, apples, and cranberries. 

Cut open washed acorn squash. Scoop out the seeds and discard. Place the squash onto a sheet pan and drizzle with oil and salt and pepper. Roast until fork tender.

Brown the sausage with onions and celery. Add in the stock, rice, and seasonings and cook until the rice is cooked. Stir in the apples and cranberries.

Stuff the partially roasted squash with the rice filling and then bake until warmed through.

This is the best fall recipe!  Even my husband who claims not to like squash is a fan. I love the filling!
