Crispy potato skins are stuffed with all of your favorite toppings to create the ultimate, creamy, cheesy Twice Baked Potatoes.

what you need:

• russet potatoes • olive oil • kosher salt • pepper • milk or cream • unsalted butter • sour cream • bacon • cheddar • pepper • garlic powder • onion powder • chives • scallions

Bake potatoes until fork tender. Once cool to the touch, slice the potatoes in half lengthwise. Scoop out the flesh of each potato, placing it into a bowl. Season the potato skins with some salt and pepper, then return to the oven.

To the potato flesh, add sour cream, butter, seasonings, cheese, chives, and chopped cooked bacon. Mix until well combined.

Remove the potato skins from the oven and fill them with the mashed potato mixture. Top with cheese.

Bake until the cheese is melted. Top with bacon and green onions and serve.
