VEGETARIAN CURRY

*chickpeas *butternut squash *kale *curry paste *nut butter *onion

*vegetable broth *coconut milk *ginger *curry powder *coriander

INGREDIENTS 

In a large saucepan, heat a bit of oil and saute the onion until softened. Add the ginger and saute until fragrant.

Add in the vegetable broth, spices, curry paste and nut butter and stir to incorporate. Stir in the squash and chickpeas.

Bring to a boil, then reduce the heat.  Simmer for 20-25 minutes or until the squash is tender.

Once the squash is tender, add in the coconut milk and kale.

Heat over low heat for 2-5 minutes until the kale has wilted and everything is warmed through.

Serve plain or over rice or pasta.
