Caramelized Onion Dip with Greek Yogurt

A simple french onion dip made with caramelized onions and Greek yogurt.

Ingredients

  • 2-3 medium onions peeled and sliced into 1/8 inch slices
  • 2 tablespoons olive oil
  • 1 tablespoon freshly chopped thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 4 ounces room temperature cream cheese
  • 1 cup plain Greek yogurt
  • veggie slices kettle potato chips, crackers, or green apple slices for serving

Instructions

  • Cut the onions in half and then slice them into 1/8-inch thick half-rounds. Heat oil in a large saute pan with a heavy bottom over medium-low heat. Add the onions, thyme, salt, and pepper and saute. Cook, stirring occasionally, for 30-40 minutes until the onions are browned and caramelized. Allow the onions to cool.
  • Combine the cream cheese and Greek yogurt with an electric mixer until well combined. Add the caramelized onions (I reserve a few to garnish the dip with, but this is not necessary.)
  • Serve at room temperature with veggie/apple slices, crackers or chips.
