  • 2-3 medium onions peeled and sliced into 1/8 inch slices
  • 2 tablespoons olive oil
  • 1 tablespoon freshly chopped thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 4 ounces room temperature cream cheese
  • 1 cup plain Greek yogurt
  • veggie slices kettle potato chips, crackers, or green apple slices for serving

  1. Cut the onions in half and then slice them into 1/8-inch thick half-rounds. Heat oil in a large saute pan with a heavy bottom over medium-low heat. Add the onions, thyme, salt, and pepper and saute. Cook, stirring occasionally, for 30-40 minutes until the onions are browned and caramelized. Allow the onions to cool.
  2. Combine the cream cheese and Greek yogurt with an electric mixer until well combined. Add the caramelized onions (I reserve a few to garnish the dip with, but this is not necessary.)
  3. Serve at room temperature with veggie/apple slices, crackers or chips.
