Easy Bean Burritos

Refried beans are combined with pumpkin or sweet potato puree and taco seasoning for a healthier spin on a classic bean burrito.

Ingredients

  • 1 15 ounce can fat free refried beans
  • 1 cup 100% pumpkin puree or sweet potato puree
  • 1 tablespoon taco seasoning
  • 6 tortillas
  • shredded cheese optional

Instructions

  • Mix together beans, pumpkin and taco seasoning.
  • Spread 1/4-1/3 cup mixture on small tortillas and top with cheese if desired. Roll up tortillas and warm in microwave for 1 minute each or on dry skillet over medium-high heat for 2 minutes per side, or until warmed through.
