Instructions
Brush the grill grates with a bit of oil and then preheat the grill or grill pan to medium heat.
In a small bowl combine the cinnamon and sugar.
Cut the peaches in half and remove the pit from the peaches using a melon baller or a small scoop. Lightly brush the cut side of the peaches with additional oil. Sprinkle the cinnamon sugar mixture evenly over the peaches, shaking to remove excess.
Place the peaches on the grill, cut-side down for 4-5 minutes, until char marks form, and the peach begins to soften.
Remove the peaches from the grill and serve warm with vanilla ice cream and chopped walnuts and a drizzle of honey, as desired.

Notes
Peaches: Select a firm, yet ripe freestone peach. This will allow the peach to be sturdy enough to stand up to the grilling process but still have optimum flavor. A freestone peach can be an Eastern, Southern, or Californian variety of peaches.Sugar: Use brown or granulated sugar with equally delicious results. Or omit the sugar and/or cinnamon altogether. Leftovers: Grilled Peaches are best served warm. However, leftover peaches can be stored in the refrigerator for up to 2 days. Add diced leftover grilled peaches to oatmeal or yogurt.
