1(15 ounce) cancoconut milkfull-fat or reduced-fat
2tablespoonsmaple syrup
2teaspoonsvanilla extract
Instructions
Place all ingredients in a large sealable jar and seal. Shake well for 2-3 minutes, until all the ingredients are well distributed. Alternatively, blend the ingredients until creamy and smooth.
Store the creamer in an airtight container in the refrigerator for up to 14 days. Use as desired, shaking well before each use.
Notes
Coconut Milk: Be sure to use canned coconut milk, not coconut cream or refrigerated coconut milk. My favorite is Trader Joe's Coconut Milk--it is thicker than most light brands but does not separate as much as full-fat coconut milk. Feel free to use any brand of light coconut milk or full-fat coconut milk you like.Optional Additions: Feel free to add up to 1 teaspoon of ground cinnamon and/or ½ teaspoon of grated nutmeg for additional flavor. Be sure to give a good shake before using, because coconut milk is so thick it needs to be shaken well to distribute properly. If you are looking to make a dairy version of homemade Vanilla Coffee Creamer, use half-and-half in place of the coconut milk.Nutrition is based on 2 tablespoons of creamer.
