Oatmeal Chocolate Chip Pancake Mix

  • 6 cups whole white wheat flour or all purpose
  • 6 cups quick cook oats
  • 1/2 cup flax seed or additional oats
  • 1/2 cup baking powder
  • 2 tablespoons baking soda
  • 3 teaspoons salt
  • 3 cups Chocolate Chips


  • Mix all ingredients together until well distributed. in very large bowl divide evenly between quart or pint size glass jars (this fills 4 quart size jars or 8 pint size jars)
  • Store pancake mix in air tight container for up to 3 months. If dividing between jars, add 2 cups pancake mix to pint size jars or add 4 cups pancake mix for the quart size jars.
  • Once the pancake mix has been evenly divided between the jars, seal, tie with a ribbon and add the printable gift tags.


Using Pancake Mix
  • 2 cups pancake mix
  • 1 cups milk, any variety
  • 1 egg
  • 1 tablespoon melted butter or oil
Mix ingredients together in large mixing bowl until well combined. Heat skillet over medium high heat, grease with butter or nonstick spray. Pour 1/4 cup batter unto skillet. Cook until bubbles form, flip and cook additional 1-2 minutes.
