Preheat your oven to 350 degrees F and lightly grease a 2-quart or 9x13 baking dish.
In a medium mixing bowl, combine the cream cheese, sour cream, mayonnaise, ketchup, and mustard. Using a handheld mixer at medium speed, beat the mixture together until smooth.
To the cream cheese mixture, add the diced corned beef, 1 CUP of the swiss cheese, sauerkraut, and pickle relish. Stir to combine thoroughly.
Pour the mixture into the prepared baking dish, spreading out the dip evenly. Top with the remaining ½ cup of swiss cheese.
Bake for 20-22 minutes, or until the dip is warmed through and bubbly and the cheese is melted.
Sprinkle with freshly chopped parsley if desired and serve warm with crackers, rye chips, or toasted rye bread.
