Mix together the apple juice, water, garlic, honey, and mustard. Add in the pork to the slow cooker.
Cook for 8 to 10 hours or on low for 4-6 hours.
Remove pork from slow cooker and shred with 2 forks. Stir the meat back into the cooking juices.
Serve shredded pork on buns and top with slaw if desired.

Nutrition facts are based on pork. Buns and slaw are not included. Use a pork loin of pork butt. For a pork butt roast, add in 1 to 2 hours of cook time. Leftover pork will keep in the fridge for up to 4 days and can be frozen for up to 3 months.
