CARROT RAISIN SALAD

Instead of a classically heavy mayonnaise-based carrot salad, this salad has been given a healthy make-over and features shredded carrots, raisins, pineapple tossed in a sweet and tangy dressing.

*carrots *pineapple *raisins *pineapple juice

*honey *pinch of salt *rice wine vinegar

INGREDIENTS NEEDED

Place the raisins in a mixing bowl and cover with hot water. Let the raisins soak for 5 minutes to plump up and then drain.

Mix together the pineapple juice, vinegar, honey, and a pinch of salt in mixing bowl.

To the dressing, add shredded carrots, raisins, and pineapple tidbits, and toss to combine.

Cover and refrigerate for 1 hour before serving.
