INGREDIENTS NEEDED

Process graham crackers, sugar, and melted butter in a food processor until wet crumbs form. Press into springform pan and bake for 10 minutes.

Whip egg whites together until stiff peaks form.

In a large mixing bowl, combine cream cheese, egg yolks, sugar, and vanilla until well combined.

Fold egg whites into cheesecake batter until evenly combined.

Bake for 45 minutes. Meanwhile mix together sour cream with sugar and vanilla.

Remove cheesecake from the oven and gently spread sour crema mixture on cheesecake. Return to the oven for 10 minutes.

Remove cheesecake from oven and allow to cool fully. Refrigerate overnight before serving.
