BLACK-EYED PEAS & GREENS
Using the saute function, crisp up chopped bacon until browned and crispy. Remove the bacon to a plate.
To the rendered grease, add in minced onions and saute until softened. Turn off the saute function and add in the water and scrape off any browned bits off the bottom of the inner pot.
Add in the dried black-eyed peas, garlic, crushed red pepper flakes, brown sugar, and vinegar.
Pile the chopped greens on the mixture--it will cook down!
Then pressure cook for 40 minutes on HIGH pressure.
After cooking, allow the pressure to release naturally. Then mix in the salt.
Serve with the reserved rendered bacon.
