This Irish Stew is made with Guinness beer, carrots, potatoes, parsnips, and chunks of meat (beef or lamb). It is knock-your-socks-off good!

*root vegetables *tomato paste *maple syrup *salt & pepper *Worcestershire *bay leaves *thyme

Season the stew meat generously with salt and pepper.

Sear the seasoned meat in a bit of heated oil until browned. Remove the meat to a plate.

Add the onions and celery and saute until softened. Add the tomato paste, garlic, and thyme and saute for 1 minute.

Deglaze the pan with the Guinness, scrape up all the browned bits, and let simmer for 3-4 minutes until slightly reduced.

Turn off the Instant Pot. Add in broth, bay leaves, maple syrup, Worcestershire, and browned beef.

Pressure cook for 30 minutes on high pressure, with a 15 minute natural pressure release. Then add in root vegetables.

Pressure cook for 3 minutes on high pressure, with a 15 minute natural pressure release.

Serve immediately or thicken with a cornstarch slurry if desired.
