Instant Pot

What You Need

Vegetable Broth

Tomato Paste

Balsamic Vinegar

Carrots

Onion

Garlic

Canned Tomatoes

Spices

Olive Oil

Cream

Rooted

Turn the Instant Pot to saute and add in oil and heat. Saute the carrots and onions until soft. Add in tomato paste and spices to toast.

Deglaze pan with broth. Add in whole tomatoes and bay leaves and pressure cook.

Once cook time has elapsed, allow pressure to release naturally and then puree. Stir in cream if desired.

Serve plain or top with toasted bread and shredded cheese and broil. YUM!
