Made with simple ingredients, this recipe for Instant Pot Tomato Soup comes together quickly and puts store-bought tomato soups to shame!

what you need:

• olive oil • onion • celery • carrots • garlic • TOMATO PASTE • vegetable broth • whole tomatoes • oregano • crushed red pepper Thyme leaves • kosher salt & Pepper • bay leaf • balsamic vinegar • HEAVY CREAM

Saute the onions, carrots, and celery. Followed by the tomato paste, oregano, & thyme.

Add the broth and scrape up any browned bits.

Stir in the tomatoes, diced tomatoes, spices, and salt.

Pressure cook. Discard the bay leaf, then stir in the balsamic vinegar.

Use an immersion blender to puree the soup and finish with heavy cream.

I will not be buying canned or store bought tomato soup again when I can make one that my daughter said tasted like it was made in a restaurant. Highly recommend!
