Pasta Bolognese

INGREDIENTS

The lineup of ingredients is extensive, but most of the ingredients are staples you probably have on hand and will give the sauce so much flavor.

Heat oil in a large stock pan and saute the pancetta until browned. Then remove it from the pan.

Add ground beef and sausage and saute until just browned. Add in the celery, onions, garlic, carrots, and saute until browned.

Add in the tomato paste and herbs and saute for a couple minutes. Slowly add in wine, broth, crushed tomatoes, and reserved pancetta.

Simmer the sauce, partially covered, for 2 to 3 hours, until the sauce is thickened and the meat is very tender. Add in cream and chopped basil and warm through.

At this time, you can add in partially cooked pasta and a bit of the cooking liquid to the sauce and simmer to finish cooking the pasta.
