Asparagus  Frittata

Made this a few times and its great every time!  Love the broccoli and asparagus combo.

INGREDIENTS

bacon

asparagus

eggs

broccoli

salt and pepper

Saute Bacon

Saute the bacon over medium-high heat in an oven proof skillet until crispy. Remove the bacon to a plate lines with a paper towel.

Saute Veggies

Add the asparagus and broccoli into the rendered fat. Saute for 5 minutes until the veggies are crisp-tender.

Combine Eggs

Whisk together eggs, cream, cheese, and salt and pepper.

Combine

Add the bacon back into the skillet and then pour the egg mixture over the vegetables.

Bake

Place the skillet into the oven and bake for 20 minutes until the eggs are set and the top is browned. Broil for 2-3 minutes if desired to brown up top.

Serve

PSlice and serve warm or  at room temperature.
