Thai Noodles

Made with a simple homemade Peanut Sauce, tons of fresh veggies, and rice noodles, these Thai-Inspired Noodles are perfect for a weeknight dinner or lunch.

what you need:

• rice noodles • canola oil • sesame oil • low sodium soy sauce • crushed red pepper flakes  • hot sauce • peanut butter • honey • lime juice • garlic • onion • sugar snap peas • Bell pepper • carrot • red cabbage • cilantro • dry roasted peanuts • sesame seeds

Start by cooking the noodles according to the package directions.

Meanwhile, mix the ingredients for the peanut sauce and set aside. Toast the peanuts and sesame seeds next.

Drain and rinse the cooked noodles, then toss them with some canola oil.

Pour the peanut sauce over the noodles and toss. Add in the vegetables and minced cilantro, then toss again. Sprinkle with chopped peanuts and sesame seeds before serving.
