An easy sheet pan chicken dinner made with chicken thighs, Brussels sprouts, potatoes, and fresh rosemary.

what you need:

• skin-on chicken thighs • olive oil • Dijon Mustard • kosher salt • garlic • rosemary leaves • baby red potatoes • Brussels Sprouts • ground black pepper • lemon

Combine the ingredients for the marinade. Add the chicken and toss to coat. Then, cover and refrigerate.

Season Brussels sprouts and potatoes with oil then season with kosher salt, pepper, garlic, and rosemary.

Nestle the marinated chicken thighs in between the vegetables.

Roast until the potatoes are tender and chicken reaches 165-dgrees F.
