Irish Stew

Irish Stew is a richly flavored, hearty stew made with lamb or beef, Guinness beer, and root vegetables. This delicious Irish-inspired stew can be made easily using the Instant Pot or Crockpot.

what you need:

• olive oil • beef or lamb stew meat • salt • black pepper • garlic cloves • onion • celery • tomato paste • dried thyme • Guinness Beer • low-sodium beef broth • Worcestershire sauce • maple syrup • bay leaves • potatoes • carrots • parsnips

Pat the meat dry and season both sides with salt and pepper. Saute it in the inner pot, then set aside.

Add in the minced onion and celery, then saute. Add the garlic, tomato paste, and dried thyme.

Deglaze the pot with beer and let the mixture cook. Cancel the saute function, then add beef broth, Worcestershire sauce, maple syrup, salt, pepper, and bay leaves. Add the seared meat back and pressure cook.

step 3

Add the carrots, parsnips, and potatoes. Remove the bay leaves and serve or proceed to thicken.
