potato corn chowder

This easy recipe for Potato Corn Chowder features tender potatoes and sweet corn in a rich and creamy flavorful broth.

what you need:

• butter • shallot • thyme leaves • CHICKEN/VEGETABLE broth • RED POTATOES • CORN • WHITE VINEGAR • SALT & PEPPER • CREAM/WHOLE MILK • FLOUR

Saute the shallots and thyme in melted butter until shallots are softened.

Add the broth, vinegar, salt, pepper, corn and potatoes and bring to a simmer.

Simmer, covered, until the potatoes are fork-tender

step 3

Whisk together the cream and flour and slowly whisk into the soup. Cook until thickened.

step 4

Serve with cheese & chives as desired.
